Singapore chicken rice

Hi.


I will make Singapore chicken rice and fried vegetables for today’s dinner.

Singapore chicken rice is steamed rice cooked with chicken and ginger so the taste of steamed rice is a little bit sweet and healthy.


This dish is very easy to cook.


 


Singapore chicken rice




Ingredients

  • 2 chicken breast fillets

  • 300g rice

  • little bit less than 400ml water (due to adding cooking sake)

  • 1 tablespoon of cooking sake (unnecessary)

  • Ginger

  • 1-2 cloves of garlic

  • 2 tablespoons of soy sauce

  • ½ tablespoon of sesame oil

  • Coriander


Chicken rice

  1. Wash rice with cold water and put rice into the pot.

  2. Shred 3 pieces of sliced ginger and put it on rice.

  3. Put 2 chicken breast fillets on rice and pour cold water and cooking sake.

(If you do not have cooking sake, just pour 400ml cold water)

  1. Leave rice for 15 minutes

  2. Cook rice with medium to high heat until boiled.

  3. When you see bubbles or water has evaporated, turn heat down to a low to medium heat.

  4. After 10 - 12 minutes, check rice if it is ready.

  5. When rice is ready, turn the fire off and leave it for 10 minutes.

  6. After 10 minutes, take cooked chicken and slice it. also mix rice.

  7. Serve chicken and rice with coriander.


Sauce

  1. Grate garlic and ginger. Size of ginger is as big as garlic.

  2. Mix grated garlic and ginger, soy sauce, sesame oil and chopped coriander’s stem.


Useful Tip

  • Use the pot which water can cover whole chicken


 

Fried vegetables


ingredients

  • 1 bunch of chinese broccoli

  • 1 carrot

  • 1-2 cloves of garlic

  • ½ tablespoon of sesame oil

  • 1 tablespoon of oyster sauce

  • ½ tablespoon of fish sauce


  1. Cut vegetables

  2. Cook chopped garlic with sesame oil

  3. When garlic makes bubbles, add the stem of chinese broccoli and carrot for 2 - 3 minutes. Then add other chinese broccoli and cook it until the leaves become soft.

  4. Add oyster sauce and fish sauce and cook until sauce is marinated with vegetables
