A lot of types of mushrooms are sold at supermarkets in Japan.
Shiitake mushroom, Eringi mushroom, Enoki mushroom, Nameko mushroom, Shimeji mushroom, Maitake mushroom, Matsutake mushroom, Black fungus ect.
Mushrooms are very healthy and have some health benefits.
Have you ever heard of Beta-glucan before?
Beta-glucan is a kind of glucose. It is found in cells of fungi, plants, oats, yeast, etc and it helps to boost the immune system in our body. Mushroom has that Beta-glucan. Therefore, it is better to eat mushrooms in winter to boost our immune system.
My grandmother has left Shiitake mushrooms next to the windows before cooking it when I was a little. She told me that the Sun boosts vitamin D of mushrooms and Vitamin D is needed for our body to build strong bones and muscles, as it helps your body absorb calcium. It not only has Vitamin D but also it has Vitamin B2 which helps the reproductive cells of skin, hair and nails.VitaminB1is necessary for transforming glucose into energy in our body. In Addition, mushrooms have rich fiber which helps keep our digestive system functioning properly. Health benefits of fiber include improved blood sugar control, weight loss, better skin, and reduction in the risk of diseases such as heart disease, stroke, diverticular disease, irritable bowel syndrome, colon cancer. The recommended daily fiber intake is 30 g for men and 25g for women. Black fungus have 57.4g/100g, dry Shiitake mushrooms 41g/100g, Shiitake mushrooms 3.8g/100g, mushroom 1.0g/100g. Compared to Banana pumpkin 2.8g/100g, banana 1.1g/100g.
However, I do not cook mushrooms everyday but it gets off very quickly.
We could keep it in a freezer for a month. Also, it is said that the taste of mushrooms will get better after freezing. Frozen Enoki mushrooms helps prevent the absorption of fat in the body.
So I recommend freezing your mushrooms before cooking with them.
We do not have to wash mushrooms because it will change colour and get bad quickly.
If they have some soil on them, use kitchen paper to take it off.
Mushroom, Shiitake mushroom, Eringi mushroom
Slice them and put them in a ziplock, deflate it.
Tip: Lemon might help reduce change in colour.
Enoki mushroom, Shimeji mushroom
Cut off the stem of them, Cut the Enoki mushroom in half. Separate mushrooms for easy cooking. Put them in a ziplock with air. After it becomes hard, shake or squish it to separate each other.
When you cook frozen mushroom, just cook with other ingredients.
