Hello.
ChanChan yaki is a fish dish cooked with a lot of vegetables and sweet Miso. It is a local dish in Hokkaido Japan. Hokkaido is a big island in northern Japan and agriculture is flourishing so we can eat fresh and delicious fish there. ChanChan yaki is usually cooked with salmon but trout is also nice.
I usually cook ChanChan yaki with rainbow trout but when it is hard to buy it, I cook with frozen fish. Also, we can use leftover vegetables to consume for a day.
Ingredient
☆ 4 tablespoons of Miso
☆ 3 tablespoons of cooking sake
☆ 2 tablespoons of sugar
☆ Sliced 1 to 2 cloves of garlic
(☆ some dried chili if you want)
Fish
Some vegetables (carrot, onions, chinese cabbage, cabbage, mushrooms, bok choy, etc)

Fresh whole fish
Mix all ☆ingredients in a bowl and put the sauce into the fish stomach.
Cook cut vegetables by the microwave. (around 2 minutes)
Wrap fish and vegetables with a cooking sheet or foil and cook it by oven 180℃ for 20-30 minutes until cooked well.

Sliced fish/ Frozen fish
Mix all ☆ingredients in the bowl.
*If you have sliced flesh fish, grill it until both the skin is crispy and a nice golden brown colour. It is OK if the inside of the fish is still raw.
* If you have frozen fish, put fish in the bottom of the pan or pot.
3. Put all cut vegetables on the top of fish or around fish.
4. Add ☆mixture on the top of vegetables and put the lid on.
5. Cook with medium heat until fish and vegetables are cooked well
☆Adding butter makes it nicer :)
