In winter time, we miss warm food.
Stew is not the only winter food but also Miso soup is good for warming our body.
Miso soup is very simple to make and you just need Miso, fish stock and some vegetables.
Miso soup has some benefits for our body.
Miso is a fermented bean so it promotes the growth of beneficial bacteria, known as probiotics which is shown to improve immune function. As you know typical fermented food such as yogurt is cold so Miso soup is both warm and provides beneficial bacteria. Also Miso is protein and amino acid so this helps to improve our skin to be smooth and healthy.
Are you concerned about the sodium inMiso? It's not too bad. If you consume Miso as 1 bowl of Miso soup(150ml), sodium consumption is around 1.2~1.5g. Also, Miso soup is cooked with some vegetable which has potassium. Potassium helps balance sodium out of your body. It means if you eat Miso soup with a lot of vegetables, that vegetable helps to reduce sodium.
I would like to share my easy Miso soup recipe with you.
I recommend you combine the following ingredients into your Miso soup
Tofu
Chinese cabbage
Enoki mushroom
Buk Choy
Spring onion
Wakame (Dried seaweed)
White radish
Salmon(it is left over one. You can buy it at fish market very cheap)
Sliced ginger
But you can add any vegetables into Miso soup.
Examples are carrot, onion, cabbage, potato, bean shoots.
Start by boiling 400ml water
Cut vegetables or tofu into small pieces
Put them into boiling water (I usually put them into the pot before water is boiled)
When vegetables are cooked, add 1 tablespoon of fish stock
After fish stock is melted, turn off the fire and add 0.5 tablespoon of Miso
Tip
Do not boil water after adding Miso. It is gonna be salty
Please adjust Miso and fish stock to make your taste. I do not like salty taste so I might add less Miso than normal. My brother has told me that my Miso soup is not Miso soup because he could not taste Miso.
